These are inspired by the cookie man cookies, because our cookie man closed down after the lady who owned it told me she hated this stupid town and all the small minded people in it and she was going back to Sydney. I just wanted a cookie, but hey.
230 g butter or margarine
110 g castor sugar
1/2 teaspoon vanilla essence
270 g self raising flour
Beat first three ingredients together until light and fluffy.
Mix in flour.
A teaspoon at a time, roll cookie dough into a ball and place on a lined tray.
Press down on the top so they are less on a ball and more of a short of deflated looking ball. Don’t completely squish them.
Get your jellies, I used ones from the bowling alley because they have mixed lollies that are pretty great. Jelly babies or something with that texture would work as well.
Press one loot into the centre of each biscuit. Don’t bury it in, but in enough that it’s not falling out.
Bake in a 180 degree preheated oven for approx 15 minutes.
Makes about 26 cookies.
